Eric Holden is an up and coming chef with a passion for fresh, local ingredients infused with international flavour and techniques. He is currently working towards his red seal certification at Camosun College. Eric is also a junior member of the Canadian Culinary Federation of Chefs and Cooks (ccfcc). He doesn't just prepare delicious edibles... The plate is his canvas, as he paints with alluring aromas, flavours, and colours. He forages mushrooms and wild edibles when in season and grows and preserves produce in two personal gardens at home. "I have a great appreciation of the amount of forageable food on the island. There is such a variety of local ingerdients right at our finger tips!" Eric was most recently awarded a distinction from La Chaine des Rotisseurs.
